How to Prepare Spaghetti Squash

Using spaghetti squash instead of pasta is a great way to reduce calories and carbohydrates without sacrificing flavor.

STEPS

  1. Poke holes in the skin and microwave 4 minutes
  2. Cut in half and scoop out the seeds
  3. Brush with olive oil and bake 40 minutes at 350-degrees
  4. Scrape out the spaghetti-like strands with a fork

Marinara Spaghetti Squash
Makes 4 servings

INGREDIENTS

  • 1 spaghetti squash
  • 1½ cups marinara sauce
  • cloves minced garlic or ¼ teaspoon garlic powder
  • Salt and pepper
  • ¼ cup grated parmesan cheese

DIRECTIONS

  1. Cook spaghetti squash and scrape the strands into a colander. Allow excess liquid to drain.
  2. Meanwhile, bring marinara sauce to a simmer in a pan. Add garlic to the sauce and stir. Add salt and pepper to taste. Adjust heat to low.
  3. Add spaghetti strands to the skillet and toss to coat with sauce. Add parmesan and toss to combine.
