Orange Honeyed Acorn Squash

INGREDIENTS

DIRECTIONS

  1. Cut squash in half, remove seeds, and place halves in shallow baking pan.
  2. Combine orange juice and honey. Mix well. Put some of the orange juice/honey mixture in each squash cavity.
  3. Add 1 Tablespoon of the butter to each squash half and sprinkle with nutmeg or cinnamon, if desired.
  4. Cover pan with aluminum foil to keep steam in and speed cooking.
  5. Bake 30 minutes, remove foil, and continue baking 30 minutes more, or until squash is tender.

Cut the two halves of squash into chunks of two inches or more and remove skin prior to placing them into boiling water. Let them boil until you feel the squash will mash with a fork. Remove the squash and strain into the sink. Then mash and serve with butter and salt and pepper, or your choice of toppings.
