Butternut Squash Soup Recipe: A Testament to Healthy, Accessible Eating
In honor of the occasion, we’re delighted to share a diabetic-friendly recipe that’s not only delectable but also meets the nutritional requirements of those with diabetes. This Butternut Squash Soup, incorporating an ingredient from our diabetes-friendly box – apple sauce with no added sugar – is the epitome of how healthy eating can be both accessible and pleasurable. - 1 large butternut squash (peeled, cubed, and roasted)
- 1 tbsp oil
- 1 diced onion
- 1 can of no sugar added apple sauce
- Salt and pepper to taste
- Recommended spices: nutmeg, thyme, dried sage, garlic powder
- 4-6 cups of vegetable broth
- Preheat your oven to 425°F for the butternut squash.
- Sauté onion in a pot, add the roasted squash, apple sauce, spices, and broth.
