Healthy and Affordable Meals: Veggie Stir Fry

March is Nutrition Month. A perfect time to focus on healthy and affordable meals.  

Eating healthy food doesn’t have to be expensive or complicated. Our vegetable stir-fry is a simple and delicious way to enjoy a balanced meal. 

We use pantry staples and frozen veggies to pack this recipe full of flavor and nutrients. 

Our on-staff Registered Dietitian made this rich with fiber, vitamins, and whole grains. It’s a quick and healthy option for busy weeknights. 

Plus, you can add protein to make it even more filling! 

Healthy and Affordable Veggie Stir Fry

Ingredients: 

  • 2 cups frozen mixed vegetables 
  • 1 tablespoon low-sodium soy sauce 
  • 1 tablespoon oil 
  • 1 clove garlic, minced 
  • 1 cup cooked brown rice 
  • 1 tablespoon honey 

Instructions: 

  1. Heat oil in a pan over medium heat. Add garlic and cook for 1 minute. 
  1. Add frozen vegetables and stir-fry for 5-7 minutes, until heated through and slightly tender. 
  1. Stir in soy sauce and honey to coat the vegetables. 
  1. Serve over cooked brown rice. 

This recipe can be done in less than 30 minutes. It even has 10 grams of protein and fiber.  

The frozen vegetables and brown rice also make sure you get enough vitamins and minerals. This recipe is high in vitamin A, Vitamin C, Iron, and Calcium.  

Need extra protein? Try adding an affordable protein source. We love scrambled eggs, canned chicken breast or tuna, or even ground turkey.
